Challenge Approved: Matcha Lime Breakfast Bowl
Ice cream for breakfast isn’t nuts. But there’s coconuts. Combined with banana and lime, this zesty breakie is perfect while detoxing or going through phase 1 of your challenge!
HERE’S WHAT YOU NEED:
2 frozen bananas
10 coconut milk ice cubes*
1 tbsp matcha powder
Zest of 1 lime
To make coconut milk ice cubes, pour 1 full fat coconut milk can into ice cube trays and let freeze overnight
HERE’S HOW TO MAKE IT:
Add bananas and coconut milk ice cubes to a blender and blend until smooth and creamy, scraping down the sides as necessary.
2. Add Matcha powder and lime zest, and blend again until the colour is evenly spread throughout.
3. Add to a bowl and top with fruits and coconut flakes. You can also add nuts, seeds, super foods, nut butter, or anything else you'd like.
